How To Make Homemade Buttermilk Substitute
It’s rare to see cow’s milk let alone buttermilk in my refrigerator at any given time because all 5 of us are lactose intolerant. We have tried everything from Rice, Soy, Hemp, Coconut, to our most popular Almond Milk. With my Soy allergies though, we have eliminated all Soy Products from our house completely. I will sometimes use cow’s milk or cream for cooking or baking, but if I can find a substitute that offers a similar consistency in a recipe I would much rather go the Dairy Free route. It makes for a much happier tummy in the long run.
I decided to try my hand at making a Buttermilk Pie, inspired my Aunt’s very delicious recipe that I can no longer enjoy with the wheat and dairy. I scoured my cook books and online recipe ideas for substitutions and inspiration. My curiosity led me further to see if it was possible to make this dairy free as well as gluten free…I Love the Internet for this reason. I can find most anything using Google! After recipe searching and comment searching here is what I came to:
5 Homemade Buttermilk Substitutions
In a pinch some of these are easier than others. The Lemon Juice or Vinegar are my go to options. All of the methods start with “milk” so you will need to have that on hand. Most of these can be used with any Dairy Free/Vegan Milk.
Cream of Tarter* (DF/V)
Measure 1 3/4 Tbsp cream of tarter plus 1 Cup milk. Whisk to combine and let stand at room temperature for 5-10 minutes, until curdled and then stir.
Lemon Juice* (DF/V)
Add 1 Tbsp of lemon juice to a liquid measuring cup. Then, add milk until the amount reaches 1 Cup. Let the mixture stand at room temperature for 5-10 minutes. The milk should look curdled. Stir and you have homemade buttermilk!
You can easily make a buttermilk substitute with 2 Tbsp milk plus enough plain yogurt to equal 1 Cup. Stir to combine and then use as your recipe instructs. (For a Protein Packed Version use Greek Yogurt – it contains tons of protein in 1 serving and has more live cultures than most yogurts – I buy the Chobani brand).
If you have sour cream on hand you can easily make a buttermilk substitute by thinning the sour cream with a bit of milk until it reaches the consistency of buttermilk. Stir to combine and then use as your recipe instructs.
White Vinegar* (DF/V)
Add 1 Tbsp of white vinegar to a liquid measuring cup. Then, add milk until the amount reaches 1 Cup. Let the mixture stand at room temperature for 5-10 minutes. It should look curdled. Stir and you have homemade buttermilk!
