Pasta in Creamy Garlic White Wine Sauce with Zucchini

  • 2 Tbsp Olive Oil
  • 1/2 stick (1/4 cup) Butter
  • 4-6 cloves Garlic, finely chopped
  • 1/2 Lemon, squeezed
  • 1/2 Cup White Wine Chardonnay
  • 1/4 cup Half n Half or Heavy Cream
  • 2 medium Zucchini
  • 1 small white Onion bulb, coarsely chopped
  • 1/2 Green Bell Pepper, diced
  • 2 Roma Tomatoes, diced
  • Salt, Pepper
  • Cooked Pasta (homemade pasta, fettuccini or linguini noodles work really well with this)
  • Grilled Chicken* (can be chopped and added in or served alongside of; *omit for vegetarian option)


Heat Olive Oil in pan and add in onions. Once onions begin to soften add in butter. Once melted add in garlic, peppers, zucchini, salt/pepper, and squeeze in lemon and saute for 3-5 minutes. Add wine, stir and allow to reduce for about 5-7 minutes. Toss in cooked pasta & tomatoes and continue simmering another 3-5 minutes. Drizzle in cream slowly while gently stirring and then turn off heat and set aside for a minute to let sauce thicken just a bit. Serve with grilled chicken, which you can chop and add into the pasta in the last few minutes of cooking to incorporate flavors or add on the side. This also pairs nice with a salad or even other steamed veggies.
