At only about 130 calories, this tasty raw vegan soup makes a great side dish or starter for a larger meal. It’s low fat and cleansing, perfect for those on a detox diet. You can use half a lime instead of just the juice to add texture to the soup. It’s a full body soup, but if you want it a little thinner, just add more water and blend for longer.
- 2 cups or handfuls fresh baby spinach
- 1/4 cup cilantro, chopped
- 1 banana, peeled
- 1/2 medium lime, peeled and de-seeded
- 1/4 cup of filtered water or coconut water
In a blender, add the water (coconut water is recommended, but not necessary), lime and banana. Blend until creamy. Chop the cilantro and spinach, add half, blend for 10 to 15 seconds. Add the rest of the greens and blend until creamy.
Pour the soup in a bowl, get a spoon and enjoy! This recipe makes one serving.
