DAY 25: Recipe of the Day

Coconut Water Refresher

Ingredients

  • 3-1/2 Cups Coconut Water
  • 1/2 Cup Frozen Mixed Berries
  • Kiwi, peeled & sliced
  • 6-8 drops of *Liquid Vanilla Stevia (found at Whole Foods Market or Sprouts)
  • 2 Cups Ice

*substitute Stevia for 2 Tbsp Vanilla Agave Nectar

Directions

Pour coconut water and vanilla sweetener into a pitcher and stir. Add frozen berries, kiwi, and ice. Serve in a chilled glass and ENJOY.

**NOTE: This can be stored in the fridge for 24 hours, but add Less or NO ice to the pitcher to keep it from watering down. If storing longer than 24 hours, Do NOT add ice and replace the fruit after the first 24 hours. 

 

Coconut Water Strawberry Lemonade

A little tropical twist to Regular Lemonade

Ingredients

  • 3 Cups Coconut Water
  • Lemons, juiced
  • 1/2 Lemon sliced
  • 1/2 Lime, sliced
  • 12 whole Frozen Strawberries
  • 2 Tbsp Agave Nectar, or any Natural Sweetener (more for strawberries)
  • 2 Cups Ice

Directions

Set aside 6 strawberries in a bowl and drizzle with 1 Tbsp of agave. Let sit for 20 minutes. Add coconut water, lemon juice, and agave to a pitcher and stir until mixed. Smash the strawberries and agave with a fork and add to pitcher and stir. Add lemon slices, lime slices, and remaining 6 strawberries to the pitcher. Add ice and stir. Serve in a chilled glass and ENJOY.

**Try adding in some 1/2 cup frozen pineapple chunks and 1/2 cup frozen mangoes for an extra tropical burst of flavor.  coconut
